The gifts are almost bought,
While checking off the "to-do" list
This poem - an afterthought!
So much for being smugly sure
Of control with Christmas cheer,
Until I awoke and realized
I'd forgotten my cards this year.
It seems there's too much happening
On this planet where we live,
Could we try this holiday season
To truly love and forgive?
From politics to ISIS
Negativity rules the day,
It's pretty overwhelming
For us common people's way.
But I think that we can change things,
Each person at a time,
Thank a soldier and policeman
For laying their lives on the line.
Give some time or a helping hand,
To those less fortunate than us,
Know some people are hurting,
A positive smile could be a plus.
Pointing fingers is no answer,
For Peace begins with me,
The most wonderful gift to give
Isn't necessarily under the tree.
My wish for us all this Christmas
Is an attitude of joy that brings,
Hope for the world we live in
And something better for our offspring.
DeeBee is generously sharing her mom's potato soup recipe with us! It's super creamy and delicious. This soup is a cup of comfort and is perfect for a cold winter day.
3 cups chicken broth
½ c. chopped onion
2 or more peeled, chopped potatoes
¼ tsp. dill
Bring these to a boil.
Reduce heat and cook until tender.
In Sauce Pan Make White Sauce:
2 tbsp. butter
2 tbsp. flour
1 cup milk
1 cup heavy cream (if you desire)
Salt & Pepper to taste
Melt butter then add flour. Slowly add one cup of milk (and cream if using) until sauce is thickened. Combine with potato mixture.
PS. For family I add 1 can of chopped green chilies!
